It would probably be a fairly even match up until Amoura uses the Nightmare. This. I doubt either of them has what it takes to physically outmatch the other, but the Nightmare will present Amoura with a fight-winning advantage in my opinion.

I'm pretty sure ingestion of blood is the normal method - and even then, only if the first infectee wills it.

Amoura and Sparda swapped some saliva back on Endgame if I remember correctly and he turned out okay so yeah, her saliva is safe.
